What is the difference between polished brass & untreated brass?

I am interested in buying new brass handles for my kitchen, but I wonder what the difference is between polished brass and untreated brass?

    As you probably have seen, we have several different brass handles in several different lengths, designs and with different finishes. Two of the most common and most popular designs are just polished brass and untreated brass. As the names say, both handles have a brass finish, but what sets them apart is that polished brass has a different luster and color that will last over time. Untreated brass, on the other hand, is more raw in its design and does not have the same gloss or color and over time, the handle in untreated brass will be patinated. Patinated means that the handle will change in color and shade as time goes on and the more the handle is exposed to touches etc.
